Proja muffins – mini corn bread

MINI PROJA. The proja is a kind of corn bread, very common in the Balkan countries. This healthy meal is prepared quickly and is suitable for any time of the day. 

For a while I avoided gluten and proja was always a great solution. Especially when I was in a hurry. It is very easy to prepare and can be eaten the next day. Proja is also a great idea when we go on a trip to nature.

I also like to use this recipe when I prepare mini proja as a snack for school to my son. It can be combined with various supplements.

Sometimes I serve proja with some proteins (such as legumes) and fiber, so I have an excellent dinner or lunch.

Proja muffins – mini corn bread

Proja is a Balkan dish made of corn flour. Proha is an alternative name used in Bosnia and Herzegovina. Healthy, vegan and gluten-free.

Ingredients:

  • 3 cups polenta
  • 1 cup cornflour
  • 6 tablespoons oil
  • 1 cup of herbal drink (rice, almond…)
  • 1 cup of plant-based yogurt (here I used coconut yogurt)
  • ½ cups of mineral water
  • 1 tablespoon flax
  • 1 baking powder
  • 20 olives
  • 1 tablespoon basil
  • salt, pepper

Preparation:

  1. Preheat the oven to 180 ° C.
  2. We grind flax and mix all the dry ingredients.
  3. Add more liquid ingredients, season and mix everything well so that there are no lumps. The mass is more liquid than thick.
  4. Pour the mass into the molds and put sliced olives over it.
  5. Bake for 20 minutes at 180 ° C.
