This creamy vegan treat layers rich dark chocolate and fresh apples over a crunchy almond base—light, luxurious, and guaranteed to impress, even the classic cake crowd.

Ingredients:

For the base:

  • 50 g coconut oil
  • 200 g almonds (soaked overnight)
  • 3 tablespoons agave syrup

For the cream:

  • 350 g dark vegan chocolate
  • 5 apples
  • 3 tablespoons agave syrup

Preparation:

  1. Preparing the base:
    Soak the almonds overnight, then peel them. Blend them in a food processor or blender
    until you get a fine, slightly sticky mass. Add the melted coconut oil and agave syrup, and
    mix well.
    Spread the mixture evenly over the bottom of a cake tin (approx. 18 cm in diameter),
    pressing it down firmly to form a smooth layer.

  2. Preparing the cream:
    Peel and chop the apples, then cook them in water for about 20 minutes until soft. Drain
    them well (don’t discard the liquid – it makes a great juice or smoothie base).
    Melt the chocolate over a water bath. Blend the cooked apples, melted chocolate, and agave
    syrup until smooth and creamy.
    Pour the cream over the almond base and smooth the top.

  3. Chilling and serving:
    Place the cake in the fridge for 4–5 hours (or overnight) to set.
    Decorate with fresh fruit or grated chocolate, if desired.
    Serve chilled.
