If you love cheese but are looking for a plant-based alternative, this vegan smoked cheese is a great choice! Made from potatoes and carrots for a creamy texture, it gets its rich flavor from smoked paprika and crispy fried onions. Thanks to tapioca flour, it has a slightly stretchy consistency, while nutritional yeast adds a mild, nutty taste. Ingredients:
- 600 g potatoes
- 1 carrot
- 3 tbsp water
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp cornstarch
- 6 tbsp tapioca flour
- 2 tsp Himalayan salt
- 4 tbsp nutritional yeast
- 5 dried black olives (finely chopped)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 3 tbsp fried onions

Preparation:
Chop the potatoes and carrot into small pieces and boil them until soft. Drain the water and mash them into a smooth mixture.
Add the remaining ingredients: water, olive oil, lemon juice, cornstarch, tapioca flour, salt, nutritional yeast, chopped olives, smoked paprika, garlic powder, onion powder, and fried onions. Mix well.
Transfer the mixture to a high-powered blender and blend until completely smooth.
Heat a non-stick pan over medium heat and cook the mixture while stirring constantly for about 12–15 minutes. It will thicken and become more compact as it cooks.
Grease a glass mold or container, pour in the mixture, and spread it evenly.
Let the cheese cool to room temperature, then refrigerate for at least 3 hours until fully set.
The cheese is now ready to use! Slice it, grate it, or incorporate it into various dishes.
