SALTY. Fasting meals can be tried by those who fast and celebrate feasts, as well as those who want to prepare lighter meals. Lean two-colour cakes have neither eggs nor milk in them and are made from one basic mixture.

Some people fast for religious reasons, others for health reasons, some like to explore different cuisines … however, fasting is not something new and is not just about believers.

There are various types of posts. Some fast so that they drink only liquid, for others it means fasting without meat, milk and eggs … It is certainly good to help the body from time to time to get rid of daily efforts related to digestion and metabolism of food.

Savoury bite - fasting cake

Do you need to prepare a cake for fasting special rituals or do you just want to try a lighter dish without eggs and milk? This salty cake is perfect for special occasions.

Ingredients:

Biscuit ingredients:

  • 2 cups flour
  • 4 tablespoons corn starch
  • 2 teaspoons baking powder
  • ½ teaspoons of baking soda
  • 2 teaspoons vinegar
  • ½ cups of vegetable oil
  • ½ cups of liquid from a can of chickpeas
  • 500 ml of mineral water
  • salt

 

Ingredients for the red part:

  • 2 teaspoons ground smoked peppers
  • 1 tablespoon *ajvar

* ajvar, a typical Balkan side dish, is made principally from roasted red bell peppers, with garlic. It may also contain eggplant and chili peppers.

 

Ingredients for the green part:

  • 100 g of young spinach

  • 300 g of vegan curd or spread as desired

Preparation:

  1. Mix all the dry ingredients for the biscuit. Add the wet ingredients and mix everything well. Divide the mixture into two parts.
  2. Blanch the spinach briefly and mix it with 2 tablespoons of water. Mix the ingredients for the red part in one half of the mixture, and the mixed spinach in the other.
  3. Preheat the oven to 190 ° C. Line a baking sheet with parchment paper and spread the red mixture evenly. Bake for 15 minutes. Also bake the green mixture. Cover the biscuits with a damp cloth and allow them to cool.
  4. Cut the cooled biscuits into three equal parts. Green cake: spread the first layer with spread, cover with biscuit, spread the second layer and cover with the last layer of biscuit. Do the same with the red biscuit.
  5. Place the cake in the refrigerator for at least an hour to set. Cut it into cubes and decorate and serve as desired.
