SPINACIA OLERACEA. Wonderful leafy vegetables that increase the choice of fresh greens even in the winter months.

Spinach is a widely used plant, as the young leaves are used fresh in salads, the older ones are cooked and the excess crops are blanched and frozen. We sow it in early spring and autumn. We prefer to skip the summer sowings, as that is when it is flowering time.

 

We use leaves, these can be cooked or eaten fresh. Spinach juice is also very useful and invigorating. When cooking, put spinach leaves in boiling water, not cold, to preserve as many useful ingredients of the leaves as possible. Remove the stalks. Cooked spinach is added with milk to bind harmful oxalates to calcium so that the body removes them. We enjoy fresh plants, as the reaction of nitrates to nitrites takes place in the stations, the same applies to the stations of already cooked spinach dishes.
